Carpaccio of cod in rolls with steamed vegetables and thyme soup
Ingredients
Cod skins and bones, onion, zucchini, carrot and cod carpaccio.
How to prepare
- We start by toasting some cod skins and bones in a frying pan.
- Then we make a traditional thyme soup and add the previously toasted skins and bones to enhance the flavor of the soup.
- We cut vegetables in julienne and sauté them.
- We use a sheet of cod carpaccio to wrap the vegetables.
- We steam the roll and serve it hot.
