Codfish flower and mandarin and spices mandala
Ingredients
Tangerines, spices to taste, olive oil, tobiko roe and codfish japanese cut ingot.
How to prepare
- Make a tangerine and spices cream until you get the desired texture.
- We cut some slices of cod from the ingot.
- With the mandarin peels we aromatize an oil to paint the cod slices.
- Paint the dish with the mandarin cream using a mandala-shaped mold.
- We roll the overlapping slices and place them in the center of the mandala crowned with tobiko roe.
