Ingredients
Potato, butter, milk, nutmeg, peas, leek, onion, olive oil, and codfish neck.
How to prepare
- Cook the potatoes, pass them through a potato masher and add the butter.
- Heat the milk and add it to the potato mixture until the desired texture is obtained. Add the nutmeg.
- Make a pea cream with leek, onion and potato.
- Cook the cod snout at low temperature and finish it on a griddle.
- Serve the two creams and finish with the cod snout.
