Codfish tapa over carnaroli rice and forest mushrooms
Ingredients
Carnaroli rice, mushrooms, shallots, cod bones and skins, cod tapa
How to prepare
- Prepare a rice casserole with mushrooms and shallots.
- Subsequently, we strain it in a broth previously made of cod skins and bones with the tips of the mushrooms used for the rice.
- We make a 40gr cod cap at low temperature, about 55ºC for 5 minutes. We remove it and mark it in a frying pan.
- We plate the rice in a bowl and we crown it with the cod cap.
