Ingredients
Piquillo peppers, gelatin, cod crumbles and cod skin.
How to prepare
- We prepare a traditional cod brandade with gelatin.
- Put the brandade in a cone-shaped mold and freeze it.
- We make a jelly with piquillo peppers juice and dip the brandade cones for a few seconds.
- Leave to defrost in the refrigerator.
- Dry and fry the cod skins to obtain a crunchy texture.
- Serve the cones on top of the crispy cod.
